| 25 | ml | Water |
| 100 | gr | Flour |
| 1 | pc | Egg-yolk |
| 2 | ml | Mustard powder |
| 2 | ml | Cayenne pepper |
| 50 | gr | Cheese |

Preheat the over to 220°C. Cook the butter, water and the salt in a pan.

Sieve the flour on a piece grease-proof paper and pour it into the boiling mixture. Stir it quickly.

Beat the mixture with a spoon till a thick mass. Turn off the heat.

Stir first the egg-yolk and second the eggs to the mass. After that add the mustard powder, cayenne pepper and the cheese to it.

Scoop teaspoons with the mixture on a grease-proof baking sheet and bake the balls 10 minutes. Bring the temperature back to 180°C en bake them another 15 minutes till they are brown. Serve immediately or let them cool down on a rack till they are cold.
